Adobo Masterclass by Adobros Puts Filipino Cuisine in the Spotlight
In a flavour-filled celebration of culture and culinary heritage, RW Marketing and Masterplan Global showcased the Adobo Masterclass featuring the Adobros, supported by the Philippine Consulate General in Melbourne, the Department of Foreign Affairs, and the Department of Trade and Industry.
Held in Melbourne at RW Innovation Centre, the masterclass was designed as a hands-on experience for guests, showcasing the versatility of adobo, the national dish of the Philippines.
At the helm were Chefs Michael Francis Pastrana and Chef Morris Danzen Catanghal of Adobros, who guided participants through traditional techniques and shared the broader cultural context of the dish.
“There’s no such thing as a standard adobo,” said Chef Michael. “It changes from island to island, town to town. With over 7,000 islands, we say there are over 7,000 ways to make adobo — and every version is valid, every version is Filipino.”
“We want Filipino food to be seen as more than just comfort food. It deserves a place in every professional kitchen,” Chef Morris added.
Chef Morris also highlighted the dish’s power to communicate culture: “Adobo is the gateway to understanding Filipino food.”
Consul Ralph Abarquez shared these sentiments:
“The Adobo Masterclass is more than a culinary event — it’s a cultural bridge. We are proud to support initiatives like this that showcase the richness of Philippine cuisine and bring our flavours into mainstream conversations in Australia.”
From flavour to philosophy, this masterclass offered a comprehensive experience that placed Filipino cuisine front and centre for the Australian food industry.
